Udang.&lt;br /&gt;Pilih udang yg masih kelihatan kekar, kaki dan kulitnya tidak mudah lepas begitu pula dengan bagian kepalanya. kalau bisa, hindari memilih udang yang sudah mulai berwarna kehitaman, udang seperti ini sudah agak lama mati, walaupun tidak busuk. Bau udang segar, masih berciri amis khas udang, namun jika sudah dicampur dengan serbuk es, biasanya bau amis kurang tercium, jadi lebih baik menggunakan indera tangan dan mata untuk memilihnya. Udang yang masih bagus akan mudah tercerai berai jika kita ambil dengan tangan. Cumi-cumi yang masih segar warnanya putih agak keabu-abuan, ini saya lihat ketika para nelayan di paku haji tanggerang menurunkan hasil tangkapannya (bahkan bbrp ekor masih megap-megap dalam box). namun lama-kelamaan warna tersebut makin memerah. cumi2 yg masih berwarna putih lebih dominan daripada merahnya, rasanya masih manis jika dimasak. yang kemerahan masih termasuk bagus apabila saat selaput kemerahannya dikupas, daging cumi2 tsb masih berwarna putih. makin lama umur cumi tersebut mati, maka saat selaputnya dikupas, daging yang berwarna putih itupun akan turut berwarna kemerahan.&lt;br /&gt;Meskipun tida terlalu baik, daging cumi yg setelah dikupas berwarna kemerahan masih bisa diselamatkan, caranya dengan menyiramkan air mendidih. Cuma memang rasanya tidak senikmat yang masih segar.&lt;br /&gt;&lt;br /&gt;Jangan heran, jika kita membeli udang/cumi cumi, kemudian kita timbang kembali dirumah, susutnya agak lumayan, apalagi jika ditiriskan. Jika timbangan di pedagang termasuk JUJUR, hal inidisebabkan kedua jenis hewan ini banyak mengandung air. Kadang-kadang cumi-cumi bisa susut sampai 10%.&lt;br /&gt;&lt;br /&gt;Bagaimana jika kita belanja didaerah wisata (Indonesia khususnya) yang karakter pedagangnya tidak kita ketahui? Hati2lah dengan timbangan mereka. Meski mereka menggunakan timbangan gantung, seringkali garis2 di batang timbangan mereka akali. Jadi bisa2 maksud kita beli 1 kg, ternyata hanya ada 5-6 ons (ini saya alami di anyer).&lt;br /&gt;Supaya kita bisa menghindari hal ini, tegaslah kepada para pedagang, untuk memeriksa timbangan mereka dan melakukan perbandingan secara kasar dengan botol air minum kemasan misalnya AQUA atau merek lainnya yang masih baru. Kemasan air minum botol besar berisi 1500 ml, dengan BJ air= 1 gr/mL, maka beratnya sekitar 1,5 kg. Jika dengan timbangan pedagang beratnya kira2 1,5 kg, maka tidak ada masalah dengan timbangan tsb. Tapi jika ditimbang ternyata lebih berat, sudah bisa dipastikan, timbangan pedagang tsb bermasalah.&lt;br /&gt;&lt;br /&gt;Atau, jika kawan2 memiliki timbangan digital m ungil seperti TANITA, kenapa tidak dibawa saja? toh tidak makan tempat di bagasi.&lt;br /&gt;&lt;br /&gt;Ciri-ciri diatas saya dapat dari pengalaman saja, ditambah baca referensi sana sini. Aduk hingga bubuk agar-agar dan gula larut. &lt;strong&gt;3.&lt;/strong&gt; Rebus adonan agar-agar hingga mendih. Tambahkan larutan maizena. Masak kembali sambil terus di aduk-aduk hingga mendidih dan tekstur adonan agak mengental. Angkat. &lt;strong&gt;4.&lt;/strong&gt; Ambil sepertiga adonan, tambahkan dengan 2 sdm sirup moka. Aduk rata. (adonan A). &lt;/span&gt;&lt;strong&gt;&lt;span style="font-family:Times New Roman;"&gt;5. &lt;/span&gt;&lt;/strong&gt;&lt;span style="font-family:Times New Roman;"&gt;Tuang sisa sirup moka ke dalam sisa adonan, aduk rata. (adonan B.) &lt;strong&gt;6.&lt;/strong&gt; Tuang adona A ke dalam cetakkan pudding yang sudah dibasahi air matang dan diisi potongan jeruk mandarin. Dinginkan hingga mengeras. &lt;strong&gt;7. &lt;/strong&gt;Tuang adonan B hingga cetakkan puding penuh. dinginkan kembali hingga membeku. &lt;strong&gt;8. &lt;/strong&gt;Setelah mengeras, keluarkan dari cetakkan. The title's implication is that if you aren't serious enough to buy one of the conical cookpots, this probably isn't for you (the way a Waffle Cookbook expects you to own a waffle iron); but I have zero problems cooking these dishes in an ordinary chicken fryer, and I can't see that I'm missing anything. (Mind you I wouldn't *mind* one of those pretty tagines, but it hasn't become a necessity yet.) Basically, these are stews or braises... which sounds much less intimidating and exotic, doesn't it?&lt;br /&gt;&lt;br /&gt;If you own a general Moroccan cookbook (I have and like Cooking at the Kasbah, plus I've read a few others) you'll certainly find a few tagine recipes, but most of the overview cookbooks stick with a few standards. (Unfortunately for me, that usually means lamb and/or olives, neither of which we eat.) With 25 tagine recipes in this collection, obviously there is a wider range, and not all of them will make you point and say, "Oh, I need to go to the middle-east market to make that!"&lt;br /&gt;&lt;br /&gt;For example, the recipe I made so far -- spicy chicken tagine with apricots, rosemary and ginger -- uses ingredients you can find at your local grocery store. It was also breathlessly easy to throw together for a midweek supper: saute onion, rosemary, ginger, chiles; throw in a cinnamon stick; brown the chicken thighs; add a few more items (such as dried apricots and a can of tomatoes) and simmer for 40 minutes. Serve with couscous. I won't need to tell you to smack your lips and say, "Yum!"&lt;br /&gt;&lt;br /&gt;A few recipes do call for typical Moroccan ingredients, such as the chile-spice paste call harissa (which you can buy in gourmet markets, if you don't feel like following the author's recipe) and preserved lemons (also available in gourmet markets, though they're *really* easy to make if you happen to find a decent price for a bag of lemons).&lt;br /&gt;&lt;br /&gt;There are 6 lamb tagines (such as one with quinces, figs, and honey), 3 beef tagines (one has beets and oranges), 3 chicken, 4 fish, and so on. The 6 vegetarian options don't turn me on all that much (though "baby eggplants with cilantro and mint" sounds good), so I wouldn't encourage a vegetarian to buy this book. Every recipe has a photo of the finished dish.&lt;br /&gt;&lt;br /&gt;Overall, though, this is a nice little cookbook -- and you don't have to buy any hardware before you invest in it.&lt;/p&gt; &lt;p&gt; &lt;span class="reviewtitle"&gt;I love the food photos....&lt;img name="pngImage" class="custReviewStars" src="http://images.amazon.com/images/G/01/associates/network/star50_tpng.png" alt="5" width="56" height="11" /&gt;&lt;/span&gt;&lt;br /&gt;I have always loved Middle Eastern meals and have developed a fondness Moroccan food and all it's specialized cookware in particular. And cooking it and collecting the cookbooks. I am in the process of collecting all cookbooks from this author for the simple reason that you often hear "You eat with you eyes also." "Ghille," of Turkish descent understands this and her cookbook photos with the help of a series of professional photographers not only help you see your "goal" in a dish that may be brand new to you but they inspire you to try this dish as many of these photos will make you salivate with anticipation. And there is a picture for each dish. Visuals are an important feature I consider when determining which cookbook to purchase. Cooking starts long before you make a list of ingredients to purchase. Ghille instills a visual "crave" anticipation before the delightful aromas and tastes of the food are experienced. I like "prolonged anticipation" when I cook. Her cookbooks continue to get better. &lt;/p&gt; &lt;p&gt; &lt;span class="reviewtitle"&gt;Delicious things.&lt;img name="pngImage" class="custReviewStars" src="http://images.amazon.com/images/G/01/associates/network/star40_tpng.png" alt="4" width="56" height="11" /&gt;&lt;/span&gt;&lt;br /&gt;We've been picking out a tagine or two to prepare each week... and so far all have been absolutely delicious! Because some of the items must cook slowly to enhance the flavors, I imagine it would be difficult to overcook anything-- yay for me! There is a middle eastern market near my house where I have been able to get some of the unique spices and ingredients. I have also found there are plenty of spice retailers online if you don't have access to such a market near you. The book admits there are some not-so-traditional tagines included, like the creamy shellfish tagine. Totally delicious, however. There was one recipe with saffron in the title, but saffron could not be found listed ANYWHERE in the recipe. I found that perplexing. I chose this one for several reasons: it can be used both on the stove top or in the oven; it can go directly on gas or electric burners without a diffuser; their technology allows it to be used on high heat and to go from freezer to microwave to oven; it is lead-free (not always true of imported ones) and it is very beautiful!&lt;br /&gt;They called me as they were eating their first meal cooked in it, a delicious and original concoction of chicken, squash, chinese 5-spice mix, apricots and cinnamon. They reported that it cooked beautifully, cleaned up easily, and looks great in the kitchen.&lt;br /&gt;I bought from Amazon because of the lowest price and quickest service getting it to me. I ordered on a Tuesday and no other vendor could promise that I would have it by Friday! (Even with fast delivery service, they couldn't get the order processed and get it out their door fast enough.) With Amazon, it arrived perfectly on time as promised.&lt;/p&gt; &lt;p&gt; &lt;span class="reviewtitle"&gt;Love my tagine!&lt;img name="pngImage" class="custReviewStars" src="http://images.amazon.com/images/G/01/associates/network/star50_tpng.png" alt="5" width="56" height="11" /&gt;&lt;/span&gt;&lt;br /&gt;I bought this tagine last year and have very much enjoyed using it for slow-cooked Moroccan and African dishes (typically requiring 4-8 hours cooking time). The results are a bit different than using a crock-pot, although the process is similar; the difference is probably due to the conical shaped lid. This model is suitable for stove top use; the less expensive and smaller imported Moroccan ceramic versions are meant to be used in an oven, and they are prone to thermal stress cracking if you're not careful. Le Creuset also makes a tagine (cast iron, similar in price to the EH model); I elected to purchase the Emile Henry ceramic version because its more closely related to the traditional design, and you can braise your meat directly in the bottom part right on the stove prior to slow cooking. This tagine is large enough to easily prepare a meat and vegetable dish for 2-4 people, and it cleans up very nicely. Highly recommended because it's an effective means of turning inexpensive meat cuts into mouth-wateringly tender and tasty stews.&lt;/p&gt; &lt;p&gt; &lt;span class="reviewtitle"&gt;Excellent Product !!!&lt;img name="pngImage" class="custReviewStars" src="http://images.amazon.com/images/G/01/associates/network/star50_tpng.png" alt="5" width="56" height="11" /&gt;&lt;/span&gt;&lt;br /&gt;I can't praise the Emily Henry Co. for this product. The craftmanship is &lt;br /&gt;superb and this isn't just another cheap over priced product. I've cooked tagines on the stovetop on medium at perfection. The design allows the flavors to recirculate and permeate the food. My chicken apricot sauce with pinenuts was perfect! I have also used it to brown steaks, then&lt;br /&gt;slow cooked to tender.  I think I've just found the perfect replacement for the slow cooker. Masukkan campuran tepung terigu dan cokelat sambil diayak sampai rata. Kocok putih telur sampai setengah mengembang, masukkan gula pasir sedikit demi sedikit sambil terus dikocok.&lt;br /&gt;&lt;strong&gt;2.&lt;/strong&gt; Tambahkan tepung terigu dan susu bubuk sambil diayak dan diaduk rata.&lt;br /&gt;&lt;strong&gt;3.&lt;/strong&gt; Masukkan mentega leleh, aduk rata. Bagi adonan menjadi dua bagian. Satu bagian ditambah kulit jeruk dan sisanya ditambah cokelat pasta, aduk rata.&lt;br /&gt;&lt;strong&gt;4.&lt;/strong&gt; Sendokkan adonan cokelat dan putih bergantian ke dalam loyang tulban 22 cm yang sudah diolesi margarin. manis putih&lt;br /&gt;5 butir telur ayam&lt;br /&gt;1 sdt soda kue&lt;br /&gt;150 g tepung terigu&lt;/p&gt;&lt;div style="text-align: justify;"&gt; &lt;/div&gt;&lt;p style="text-align: justify;"&gt;&lt;strong&gt;Cara membuat:&lt;/strong&gt;&lt;br /&gt;# Panaskan gula pasir dengan api kecil hingga lumer dan menjadi karamel.&lt;br /&gt;# Tambahkan air, rebus hingga gula larut dan kental. Angkat dan dinginkan.&lt;br /&gt;# Kocok mentega, cokelat, dan susu kental manis dengan garpu hingga lembut dan rata.&lt;br /&gt;# Kocok telur dan soda kue hingga berbuih.&lt;br /&gt;# Tambahkan mentega kocok, aduk hingga rata.&lt;br /&gt;# Masukkan tepung terigu, aduk rata.&lt;br /&gt;# Tuangkan karamel, aduk hingga rata.&lt;br /&gt;# Tuang adonan ke dalam loyang bundar berlubang tengah atau loyang baking pan yang sudah dioles margarin dan ditaburi tepung terigu.&lt;br /&gt;# Panggang dalam oven panas bersuhu 170 C.
